As we move through 15th July and the transition from early to late winter, we can detect more dryness in the air. There is a refrigerant quality and a crispness and sharpness. The taste of the season will become "bitter", and so it is time to balance with warm, moist foods that incorporate moderate quantity of natural sweetness, sour and salty. We want to counteract cold, dry, light and airy qualities with warmth, moisture and stabilising nourishment in food, drink and activity. Winter is a time to rest, restore and recuperate, before the "aliveness" of Spring.
